Celebrate Waffle Day with a Waffle Maker! Don’t have one? It’s time to get shopping!

Happy Waffle Day everyone! If you don’t have a waffle maker yet, I highly recommend getting one – even a budget-friendly one will do the trick. Trust me, the joy of making and eating homemade waffles is unmatched! This morning, I was all geared up to attend my yoga class at @corepoweryoga South End, but sadly couldn’t find parking in time to make it to class. So, I ended up driving back home and settling for a gym session and some light stretching instead. It was quite an adventure for a Wednesday morning, but hey, that’s life for you!

But guess what made everything better? My delicious kabocha squash waffles! I whipped up a batch, added some maca for that extra boost, and arranged them beautifully with a ring of fresh berries in the center. A generous drizzle of @kitehillfoods almond milk yogurt, @georgiagrinders cashew butter, and @wildwayoflife banana nut granola completed the masterpiece. They were absolutely perfect and definitely made up for my early morning mishap. Check out my stories for the full waffle-making excitement! Happy Hump Day indeed!

And speaking of the recipe, here it is:
– 1 cup steamed kabocha squash
– 2 tablespoons @nutiva coconut flour
– 1/2 scoop @nuzest_usa vanilla protein powder (or your preferred brand)
– 4 egg whites
– 1 @egglandsbest egg
– 1/2 teaspoon cream of tartar
– 1/4 teaspoon baking soda
– 1 teaspoon @wildfoodsco maca
– 1 scoop @furtherfoodcollagen collagen
– 2 tablespoons @lovemysilk cashew milk
– Cinnamon to taste

Simply blend all the ingredients in a blender until smooth. Spray your waffle maker with @chosenfoods avocado oil and cook according to the manufacturer’s instructions. And voila, you’ve got yourself a delicious stack of kabocha squash waffles to enjoy!
