Celebrating Salmon Sunday with this fresh smoked wild salmon filet and CULTURED DAIRY-FREE RICOTTA zoodles. I made this ricotta this weekend and it is so good!! Only 6 ingredients. Takes about 15-20 minutes. Anyone else forget it was time change? I was WINNING this morning with an extra hour ?How was everyone’s weekend? I took some time off IG yesterday to relax and get catch up on some life. I needed some down time! I made some homemade chicken soup yesterday too and bringing it to my step moms for dinner tonight ❤️ what was your favorite part of the weekend?

Deets: arugula, smoked salmon filet from @salmonandsable, roasted spicy red potatoes, roasted tomatoes, zoodles spiralized then sautéed and tossed in this ricotta. Ricotta: 1 cup raw cashew pieces covered in boiling water for ten-15 minutes. Save 1/2 cup of the soaking water and drain the rest from the cashews. I used my mini processor from my @mealthy hand blender (I’ll put a link in my stories) and added the water, cashews, 1 tablespoon lemon juice, 1/2 teaspoon salt (or more), 1/2 teaspoon onion powder, one garlic clove. Process until smooth. Scoop mixture in a glass bowl and stir in one capsule of probiotics with a wooden spoon. Allow to sit, covered with paper towel for a couple hours then use or store in the fridge!
