Celebrating SALMON SUNDAY with this SIMPLE SALMON SCAMPI (just 6 ingredients!)! Happy Sunday loves! I hope you all had a fabulous weekend. Mine has been fun, but definitely in need of a low key day today…so I am not at all upset that it’s cold and rainy out. I took my boyfriend out for some Spanish tapas last night to celebrate his new job, and I may have indulged in some extra tequila ? Anywho…I got some salmon from @sitkasalmonshares last week and made this one night. I love this brand because the quality is AMAZING, all wild caught and they also support small boat fisherman. Deets: Heat 1 tablespoon ghee and 1 tablespoon olive oil over medium high, season 1 pound of salmon with salt and pepper and sear for 2 minutes on each side. Remove salmon from pan, and add 4 cloves minced garlic and sauté for 1 minute. Add 1/2 cup broth (I used @bonafideprovisions bone broth), a few dashes of salt and pepper and 1/4 teaspoon red pepper flakes. Allow the liquid to reduce down to half, then stir in 1 tablespoon lemon juice and 1/4 cup cilantro/parsley mixed (or just parsley). Cook down for another minute, then add the salmon back and allow to cook in the liquid for a minute. Pour some of the sauce over @eatbanza pasta, add some Parmesan and serve!
