Celebrating SEAFOOD SUNDAY with some CREAMY GARLIC SPINACH PASTA and LEMON PAPRIKA SCALLOPS! Happy Sunday loves! Hope you all had a fabulous weekend. Mine was pretty low key and did not do too much to be honest. But I guess maybe I needed it. If you caught my stories last week I made this new spinach pasta sauce and it’s amazing! I have been using it as a dip, sauce, dressing…everything! This was lunch today and it was lit! How was your weekend? What are tour holiday plans?

Deets: gluten free pasta tossed with roasted broccolini, spinach sauce and roasted tomatoes. Topped with scallops (pat dry and salt/pepper, then pat dry again and add some paprika…sear two minutes per side on medium high in cast iron…I used ghee then top with lemon zest). Pasta sauce: 2 cups spinach, packed, 3/4 cup almond milk yogurt , 1 tablespoon lemon juice, 1 tablespoon coconut aminos, 1 clove garlic, 1 teaspoon fresh dill, 1/2 teaspoon salt, 1/2 teaspoon pepper. Blend ingredients until smooth. •
