Ah, curry! It has been too long since I last indulged in the rich, flavorful dish. Today, as I was organizing my freezer, fridge, and cabinets, I stumbled upon my forgotten container of curry powder tucked away in the depths of my spice cabinet. Its enticing aroma beckoned me, and I simply couldn’t resist its call. My body was clearly craving it, and I knew I had to satisfy that longing.

I decided to whip up a delicious curry dish, starting by sautéing minced onions, chopped mushrooms, and ground turkey in a generous amount of ghee. The depth of flavor that ghee adds to a curry dish is unmatched, so I made sure not to skimp on this essential ingredient. To the sizzling mixture, I added curry powder, coconut aminos, Himalayan salt, and pepper, creating a fragrant and mouthwatering base for my meal.

For the main course, I assembled a vibrant bowl filled with a bed of peppery arugula, roasted butternut squash, mini peppers, juicy grape tomatoes, crisp cucumber, and creamy avocado.
