Craving Curry: It’s Been Far Too Long since I’ve Had Some!
Ah, curry! It has been too long since I last indulged in the rich, flavorful dish. Today, as I was organizing my freezer, fridge, and cabinets, I stumbled upon my forgotten container of curry powder tucked away in the depths of my spice cabinet. Its enticing aroma beckoned me, and I simply couldn’t resist its call. My body was clearly craving it, and I knew I had to satisfy that longing.
I decided to whip up a delicious curry dish, starting by sautéing minced onions, chopped mushrooms, and ground turkey in a generous amount of ghee. The depth of flavor that ghee adds to a curry dish is unmatched, so I made sure not to skimp on this essential ingredient. To the sizzling mixture, I added curry powder, coconut aminos, Himalayan salt, and pepper, creating a fragrant and mouthwatering base for my meal.
For the main course, I assembled a vibrant bowl filled with a bed of peppery arugula, roasted butternut squash, mini peppers, juicy grape tomatoes, crisp cucumber, and creamy avocado. To accompany this colorful array of veggies, I reached for my favorite crackers from Jilz Crackerz. These crackers are truly a game-changer, and I couldn’t resist snacking on a sleeve of them while preparing my meal.
To elevate the flavors even further, I whipped up a curry yogurt sauce to drizzle over the top. Mixing together Forager Project cashew milk yogurt, curry powder, fresh lemon juice, coconut aminos, and a pinch of red pepper flakes, I created a creamy and zesty sauce that perfectly complemented the dish. With a satisfied belly and a happy body, I savored every bite of my homemade curry creation.
As I sit here reflecting on the comforting and satisfying meal I enjoyed, I can’t help but feel grateful for the simple joys that food can bring. Curry has a way of warming the soul and nourishing the body, and today’s impromptu curry feast was exactly what I needed. Here’s to listening to our cravings, indulging in flavorful dishes, and nourishing ourselves from the inside out. Happy Sunday, indeed!
