?Creamy artichoke spinach pasta (oil-free option)??
I’m back home after a pretty turbulent flight. I still have the jellyfish stings and they’re itchy. But you know what…I have my kitchen ???. Happy Tuesday friends.
?Recipe: Rinse and drain 1-14oz can artichoke hearts. Cook 12oz dry pasta as per packet directions, reserving cooking water when draining pasta. (?Oil-free: skip first 2 steps below. Just cook drained artichoke hearts, garlic and chili flakes in a little broth.)
?Sauté in non-stick skillet in a little olive oil until golden brown. ?Add 3 minced garlic cloves and 1 tsp red chili flakes (optional). Sauté another 30 seconds until fragrant.
?Add 2 cups reserved pasta water, 1-1/2 tbsp nutritional yeast, juice half lemon, 4 tbsp hummus. ?Mix and simmer until thickens, adding more reserved pasta cooking water as needed. Adjust lemon and hummus to taste. ?Mix in about 1-1/2 cups roughly chopped spinach and desired amount of cooked pasta. (You likely won’t use it all.) Stir well to incorporate. ?Remove from heat. Salt to taste. .
