?Creamy zucchini pasta (nut-free option) with kale Caesar salad?Another veggie-turned-sauce recipe. Really sneaking in those veggies ?. This one is made from zucchini. It’s so simple and uses vegan staples. The inspiration for using blended zucchini as a sauce comes from one of my fave recipe books, @veganreset . Thanks Kim.?
✅Recipe: (serves 2): Peel 1 medium zucchini. Chop into 1/2-inch rounds, then chop rounds into quarters. ✅Heat 1 tbsp olive oil or veggie broth. ✅Sauté the chopped zucchini + 1/2 cup chopped onion until the zucchini starts to soften, about 5 minutes. ✅Add 3 minced garlic cloves and cook another 30 seconds. ✅Add 1/8 tsp garlic powder, 1/8 tsp onion powder, 1/8 tsp white pepper and cook another minute. ✅Transfer to blender and add: 2 tbsp nutritional yeast, 1 tsp tamari or soy sauce, 1 tsp apple cider vinegar. ✅Blend on high until smooth. ✅(Optional: add 1/4 cup cashews that have been soaked in boiling water for at least 1 hour. Blend again.) ✅Add salt to taste. ✅Serve with desired amount of pasta.
