Currently SQUASHING Halloween chocolate and dreaming about these ROASTED HONEY NUT SQUASH COMBOS. Fun fact: winter squash is one of my top 3 favorite foods…ever since I was a kid. Kabocha, butternut and delicata are a few of my faves. I’ve been playing around with some new recipes lately. You can roast a bunch ahead of time and stuff then for meal prep breakfast/lunch/dinner! Just cut in half, take out seeds, put a little oil or ghee in the cavity and bake on 425 for 25-35 mins (depending on size). Here are a few ideas since it is prime squash season! I used honeynut squashes for these babies, but could easily sub any type…acorn, delicata, pumpkin. Happy Halloween! Which one would you prefer? •

1️⃣ @lef_farms greens, smoked salmon, soft boiled egg and dill
2️⃣ roasted chicken tossed with sautéed bacon/Apple/Brussels and topped with pecans, dried cranberries and maple Tahini drizzle (mix 1 tablespoon Tahini, 1 teaspoon maple syrup and 1 teaspoon coconut aminos)
3️⃣ Roasted with @vitalfarms ghee and maple! my go-to side dish: cut in half, seeded, seasoned with salt/pepper/nutmeg/ghee and roasted for 20 minutes on 425. Drizzled with maple syrup. •
