DAIRY FREE GREEK PASTA and Spicy SRIRACHA CHICKEN for two
I ate so much pasta this weekend ?♀️And I have no regrets. This was by far one of the best pasta salads I’ve had in a while. Made a simple Greek dressing for it with Apple Cider Vinegar. And the chicken was so juicy and delicious. Happy Monday loves! How was your weekend? It feels like summer today in Boston and I’m loving it…aside from being stuck inside all day ? I’m thinking it might be a sushi night because it’s too hot to cook and I’m feeling a little lazy today. •
Deets:
2 pieces chicken breast marinated in 1/4 cup sriracha,
1/2 teaspoon salt,
1/2 teaspoon pepper,
1 teaspoon garlic powder,
2 tablespoons lemon juice,
1 tablespoon coconut aminos.
I seared the top for 3 minutes and then baked on 375 for about 15 minutes.
Pasta:

dressing:
1/4 cup olive oil, 2 cloves garlic minced, 1 teaspoon mustard, 3 tablespoons Apple Cider vinegar, 2 tablespoons lemon juice, 1 teaspoon dill seeds, 1 teaspoon dried oregano, salt/pepper to taste.
