?Easy flavorful lentil dal? Had the flu the last few days…so miserable. My sweet hubby was busy looking after the kids and unpacking…so I basically had to fend for myself. I felt like a child needing her mommy! (Though my kids did make me cups of ginger tea on repeat.) As soon as I got my appetite back, I made this easy lentil dal. (I was still so weak though that it took me forever to cut the veggies. It probably didn’t help that I was chopping sitting down?.)
?Recipe: Rinse well 1 cup golden yellow/red lentils. Add to 3 cups water in saucepan. Bring to a boil, then simmer until tender. In separate pan, sauté 4 cloves garlic (sliced), 1 small yellow onion (small dice), 1/2-inch piece ginger (peeled and finely grated), 1 small green chili pepper (deseeded and finely diced) in 2 tbsp heated vegetable broth (or 1 tbsp neutral oil of choice). Sauté until softened and starts to stick, about 8 -10 minutes. Add 1/2 tsp ground cumin, 1/2 tsp turmeric, 1/4 tsp coriander and 1 bay leaf. Cook about 1 more minute until fragrant. Add 2 large, finely chopped ripe tomatoes or 1-15oz can diced tomatoes. Simmer for about 10 minutes, stirring occasionally. Add tomato mixture to saucepan with lentils and mix well. Heat while stirring, adding vegetable broth or water as needed do soupy-like consistency. Remove from heat and add salt and lime juice to taste. Top with fresh cilantro. Serve with cashew yogurt and cucumber pieces. (Note: optional: You can add more flavor by making tadka- sauté 1/2 tsp cumin seeds and 2 chopped garlic cloves in neutral oil and heat until seeds start spluttering- then add this to dal when adding lime juice and salt.)
