(Let the rice steam after it’s done cooking by removing from stove and leaving cover on saucepan at least 10 minutes.) ✅Meanwhile, pulse 1-1/2 cups edamame (defrosted and drained) in food processor until a pebble-like consistency. ✅Add 3/4 cups cooked rice, 1 large minced garlic clove, 1 tsp smoked paprika, 3/4 tsp ground cumin, 1/2-1 tsp chili powder to food processor. ✅Pulse until forms a consistency that easily holds together when squeezed. ✅Transfer to bowl and add 3/4 cup green peas (defrosted and drained), a few turns black pepper and salt to taste. Use hands to incorporate. ✅Form into patties (makes about 6 large). ✅Either bake on lined sheet at 375F until golden brown (about 20 minutes) or pan fry.
