Excited for Wednesday Waffle Day! Who’s ready for the holiday week ahead?

Good morning everyone! Can you believe it’s already Wednesday and you know what that means – WAFFLE Day! I absolutely love the holiday week schedules and I truly hope that all of you had a wonderful 4th of July. My holiday was incredibly relaxing this year, filled with sunshine, some cooking, and quality time with good friends. The weather here in Boston has been absolutely gorgeous and I am soaking it all in. I also have a slightly lighter work week ahead, which means I am looking forward to relaxing a bit more and catching up with some friends. How was your holiday? Did you have any favorite food traditions for the 4th of July?

I actually whipped up a new recipe for a BBQ yesterday and I can’t wait to share it with you all a little later. But for now, I am indulging in some delicious kabocha waffles topped with berries, @so_delicious coconut milk yogurt, @georgiagrinders cashew butter, and @nunaturals cocoa syrup. It’s a perfect way to kick off this HUMP DAY!

Now, onto the recipe:
Ingredients:
– 1 cup steamed kabocha squash
– 2 tablespoons @nutiva coconut flour
– 1/2 scoop @nuzest_usa vanilla protein powder (or any other protein of your choice)
– 4 egg whites
– 1 @egglandsbest egg
– 1/2 teaspoon cream of tartar
– 1/4 teaspoon baking soda
– 1 teaspoon @wildfoodsco maca
– 1 scoop @furtherfoodcollagen collagen
– 2 tablespoons @lovemysilk cashew milk
– Cinnamon

Instructions:
1. Blend all ingredients in a blender until smooth.
2. Spray waffle maker with @chosenfoods avocado oil and cook according to the machine instructions.
3. Enjoy your delicious waffles!
