There are so many ways to cook a sweet potato?, it’s a good thing they have many health benefits! They are a good source of fiber?, high in beta carotene?, and are low in glycemic index (even lower than a regular potato?)! They also pair perfectly with everything from meat? and seafood? to a salad? or just by itself?. Thank goodness for central and South America for cultivating them and sharing it with the rest of the world?! Keep reading? to see how to prepare it different ways??

How to prepare:
Boil: cooking in 1 cup of boiling water for 3 minutes and 15 minutes covered.
Steam: cooking in 2 cups of boiling water for 3 minutes and 20 minutes covered.
Microwave: cook for 5 minutes on High with 1 tbsp of water.
Blanch: cook for 10 minutes in boiling water. Drain and place the sweet potato in an ice water bath for 2 minutes.
Roast: Preheat the oven to 400°F and line a baking sheet with parchment paper. Drizzle the sweet potato with olive oil and line on the baking sheet. Roast 15 to 22 minutes or until browned to your preference.
Slow Roast: Preheat the oven to 325°F and line a baking sheet with parchment paper. Toss the sweet potato with olive oil and line on the baking sheet. Roast sweet potato for an hour, or slightly longer, turning them every 20-25 minutes.
Stovetop: Heat oil in a nonstick skillet over medium-high heat. Add the sweet potato and let it “roast”, browning it for a minute for more flavor.
Grill: Preheat grill to medium heat. Place the sweet potato on the grill. Grill the sweet potato until knife-tender and slightly charred, flipping every 2 minutes for 8 to 10 minutes.
Cook Forever: Bring a large pot of water to a boil. Add the sweet potato and cover the pot to bring it back to a boil quickly. Blanch the sweet potato for five minutes. Heat olive oil in a skillet over medium-high heat and add the sweet potato. Cover the skillet, turn the heat to very low, and cook for two hours. Use a spatula to turn the sweet potato over in the skillet a few times, but try not to break it up. It will be very tender when done.
