FRIDAY calls for some “CHEESY” CHIPOTLE SWEET POTATO and WHITE BEAN QUESADILLAS and this 3 ingredient AWESOME SAUCE! (Vegan and gluten free!) Happy Friday loves! Hope you have had a good week. Looking forward to the weekend over here ? We are headed to the beach tomorrow since it’s going to be a hot one. Made these for lunch today and they hit the spot. I’m smoothie testing in the kitchen today…so basically the best work day ? Any big plans for the weekend?

Deets: 2 tortillas heated up on medium high in a pan sprayed with avocado oil, (I heated the greens in the same pan while the tortillas were cooking). Mash some white beans onto one side of the tortilla and add a sprinkle of chipotle powder, then top the beans with vegan mozzarella (or any cheese or your choice). Once the cheese starts melting add some mashed sweet potato and wilted greens and fold over. Cook for another 30 seconds or so. Awesome sauce: Mix some organic ketchup with a little dairy free sour cream (or regular) and a couple dashes of coconut aminos. •
