Friday Mood: PAN SEARED PAPRIKA GARLIC SCALLOPS and 6 INGREDIENT CREAMY TUSCAN BROCCOLI SUN DRIED TOMATO PASTA. Happy Friday loves! Hope you all had an amazing holiday week so far. I’ve been EXTREMELY unmotivated to work past couple days…and yesterday I literally did nothing except watch the Food Network and eat leftover holiday food. 🤷‍♀️ I’m letting myself just be this week, knowing that I’m just a few days it’s back to the grind. I did manage to make this delicious lunch today…and it took literally 15 minutes. If you’re like me and craving something comforting but healthy this weekend I suggest making this! How are you all doing? Any big plans this weekend?



Deets: wild scallops (patted dry) seasoned with salt, garlic powder and paprika. Seared in ghee for 2 minutes per side on medium high. @eatbanza pasta tossed in this delicious sauce. SAUCE: 2 cups of canned coconut milk (I used light but works with regular too), 1 teaspoon salt, 1/4 teaspoon pepper, 2 cloves minced garlic, 1/4 cup basil. Heat over medium high and bring to a boil, then add 1-2 cups of riced broccoli (or shredded), and cook for about 5 minutes until broccoli is tender. Add 2 tablespoons sun dried tomatoes and a box of cooked pasta. **if you want a thicker sauce add 1 tablespoon arrowroot/potato or corn starch mixed in a tablespoon of water and mix into the liquid. Served with some @lef_farms greens and tomatoes. •
