Good afternoon ?? Everyone enjoying their Labor Day!? I’ve spent yet again the entire day in the kitchen! Ha! But that’s ok, because I’ve been having fun and doing some recipe development/testing. I have some awesome stuff coming soon! After crepes for breakfast and taste testing baked goods all day, I honestly was not super hungry! BUT this girl doesn’t like to skip meals ?I needed some veggies and some protein for sure… I like to keep my body fueled and not be starving by the time dinner comes! So I opted for something light for lunch. I quickly broiled some veggies (broccolini, mushrooms, peppers), fresh tomato and seared a piece of chicken…mixed it up with some shirataki fettuccine noodles and an herbed yogurt sauce made with @foragerproject cashew milk yogurt. Side note: I actually enjoy the lightness of these noodles, but I do NOT use them as a replacement for when I’m craving pasta/carbs. If my body wants carbs, then I give it carbs…I don’t find pleasure (anymore) in denying my body what it’s asking for. But, I do enjoy the unique texture of these noodles, so when I’m craving something light I use them as a vehicle to make my dish a bit more interesting. For a nice light lunch, this was perfect!
