Good morning babes and Happy Tuesday! Anyone see the whole eclipse yesterday??? I saw what we could here in Boston, and even the partial visibility was an amazing sight ❤️ The whole sky lit up pink and there was a shadow over the sun ☀️ After a wonderful yoga/sushi date last night with @kellylafontaine followed by a good 7 hours of sleep, I woke up feeling refreshed. Got a workout in and came home to make these delicious eggplant ? toasts! Three broiled eggplant slices….one topped with my delicious Beet and purple cauliflower spread (still need to post this recipe!) and avocado, one topped with mixed greens, tomato and 2 @peteandgerrys eggs cooked in ghee, and one topped with roasted kabocha squash and @georgiagrinders pecan butter and @sportsresearch MCT oil. They were delightful ? I hope you’re all having an awesome morning and have a kick @$$ rest of your day! Love and light!
