Green Monday’s is officially a thing?. This is practically a bowl of beans ?. I’ve made chickpea pasta with a creamy tofu and spinach sauce. I topped with wilted spinach, peas and pistachios ?.

To make the sauce you’ll need:
– 100g spinach
– 100g tofu
– 50g sunflower seeds
– 2 roasted garlic cloves
– pinch of salt to taste
– 175ml water, vegetable broth or extra virgin olive oil

Put all of the ingredients in a food processor and blend until smooth. The sauce is enough for 2-3 servings. –
Cook your pasta according to the pack instructions then stir in the spinach sauce. You can heat the spinach sauce on a simmer for 2-3 minutes before stirring into the pasta. #meatlessmonday #eatyourgreens #greengoodness
