Good morning, beautiful people! Can you believe it’s already Hump Day? Time to treat yourself to some delicious waffles to start your day off right. I hope your morning is going well so far! Personally, I slept like a rock last night, feeling like I could have used another hour or two of sleep. But, alas, my internal alarm clock had other plans for me. So, I decided to make the most of it by hitting the gym for a quick cardio and leg workout before coming home to indulge in the plantain waffles I whipped up the night before.
I toasted these waffles to perfection and topped them with some scrumptious @so_delicious coconut milk yogurt, fresh blueberries, juicy peaches, crunchy @wildwayoflife granola, and decadent @georgiagrinders PECAN butter. Let me tell you, breaking into that jar of pecan butter was like hitting the jackpot! It’s absolutely divine. With a busy morning ahead of me, I am ready to tackle it head-on with full force.
Can you believe it’s already August? It’s bittersweet for me because it’s not only my birthday month, but also the last full month of summer. Any exciting plans in store for this month?

Here’s the recipe for those mouth-watering plantain waffles:
– 1/2 yellow plantain
– 2 tablespoons of coconut flour
– 1/2 scoop of vanilla protein powder
– 4 egg whites
– 1 egg
– 1/2 teaspoon of cream of tartar
– 1/4 teaspoon of baking soda
-1 scoop of collagen
– Cinnamon to taste
Simply blend all the ingredients in a blender until smooth. Spray your waffle maker with avocado oil and cook according to the machine instructions. Then, sit back and savor the deliciousness! Enjoy!
