Happy Monday lovelies 💕 Dropping in with this VEGAN AVOCADO PASTA and BEET FALAFEL! I was on a mission to use up the my ripe avocados and beet hummus before I went away for a few days, so I made this for dinner last night with some @eatbanza chickpea pasta and ate the rest of it today for lunch. I’m waiting to board my plane to Florida, currently people watching. 😎Sharing this avocado sauce below, and I’ll share the falafels later on the blog (made with cassava flour, beet hummus and olive oil!) P.S. I get asked if I eat everything I share…the answer is yes BUT not always all at once. Sometimes I make a meal and eat half and the rest later, other times I eat it all! Sauce: about 2 ripe avocados, 1/2 cup unsweetened almond milk, 1/2 roasted onion, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon garlic powder, 1/3 cup cilantro, 1 tablespoon lemon juice. Processed in food processor until smooth. •
