Here’s a new recipe I’ve been crushing on ‘Barbecoa Borlotti Beans’

Ingredients
🍀400g tin borlotti beans, rinsed and drained
🍀1 large shallot, finely chopped
🍀1 fat garlic clove, finely minced or grated
🍀150ml passata
🍀2 teaspoons barbacoa paste
🍀1 teaspoon vegetable seasoning or 1 vegetable stock cube
🍀1 red chilli (optional)
🍀Chopped coriander (to garnish)

Directions
✨Heat a splash of water or oil in medium saucepan over medium heat. Add the shallots and cook for 1-2 minutes until translucent. ✨Add garlic, cook for 20-30 seconds then add pasta, vegetable seasoning, chilli and barbacoa paste. Stir well then add around 100ml of water and cook for around 15 minutes on a simmer. ✨Stir in the borlotti beans, and cook for a further 5 minutes or until the beans get warm. Loosen with a splash of water or vegetable broth if the pan gets too dry. Season with salt and black pepper as needed.✨ Serve over brown rice and garnish with coriander.
