Happy Monday Lovelies!
I love my grains, and I’ve always believed that they were more satiating than 🥔 but I *think* my opinion on that is changing 🙈. Do you find 🥔 more satiating than grains? ~
I cooked this new🥔, chickpea and pea curry for lunch today. I enjoyed it with pilau cauliflower rice and a 🥒 & yoghurt sauce. I’ve just posted the recipe for the curry and pilau cauliflower rice on my blog. You can tap on the 🔗in my bio to print it.
The recipe for the cucumber and yoghurt sauce is very simple. You need:
🍀½ a medium cucumber, peeled, deseeded then grated
🍀120ml plain dairy-free yoghurt (any plant-based option will do)
🍀2 tablespoons finely chopped parsley (or coriander)
🍀Pinch of cumin
🍀Salt and pepper to taste
