Happy Saint Patty’s Day ☘️ Enjoying this LEMON DILL GNOCCHI and smoked salmon bowl with mini purple cabbages (aka purple Brussels 🙃) as I put up my feet and relax for the afternoon in sweat pants. This gnocchi was so flavorful, see below! Had a day filled with friends and good food yesterday and it was perfect. After meal prepping all morning, this simple meal hit the spot! What did you all do this weekend?



Deets: arugula, wild smoked salmon, avocado with hemp seeds, sautéed purple Brussels cooked in garlic ghee, @traderjoes cauliflower gnocchi sautéed in some ghee (from frozen) then baked on 450 for about 10 mins in the same pan to get it nice and crispy. I tossed the gnocchi in lemon zest, chopped dill, salt and lemon juice and it was perfect with the salmon!
