Happy Sunday ? it’s been a lovely chilled day for me. I succeeded in actually relaxing for once and I’m so proud of myself ☺️

I’ve been playing around with new ingredients to bring you new recipes. Pomegranate molasses is one of them, it’s made by cooking pomegranate juice into a syrup. You can use it in marinades, salad dressings and as an ingredient in sauces. It’s a typical ingredient in Middle Eastern cooking. Now it’s totally new to me so I’m still playing around with it.

I used it today today to make a tofu curry. I basically pan fried the tofu first then set it aside. I then fried shallots until soft, added garlic, curry powder, turmeric, garam masala, tomato paste, and chopped tomatoes. I fried for around 5 minutes before adding vegetable stock, splash of water and a tablespoon of molasses. I cooked on a simmer for around 10 minutes then added the tofu back into the pan. I cooked for a few more minutes then served it over couscous. Garnished with fresh coriander and pomegranate seeds.

I can’t give you a proper recipe yet because I’m still playing around with it, but you’re welcome to try my test if you want to ? It was good for a first attempt.
