Happy Sunday loves!!! Enjoying some upgraded sweet potato toasts and crispy asparagus egg nests this morning after quite a workout. Check my stories for a little preview of me making these babies. Also made this new arugula parsley pesto (recipe below). Enjoying a relaxing Sunday and getting a little work done then meeting a friend later for dinner. What is everyone else up to today?!



Deets: roasted asparagus ribbons cooked into egg nests with dill, two slices sweet potato toasts with avocado, micro greens, hemp seeds and tahini and tomato arugula parsley pesto and micro greens. Pesto (one package arugula, 1/3 Cup parsley, 2 tablespoons lemon juice, 1/2 teaspoon salt, 1/4 Cup olive oil, 2 cloves garlic and a pinch of red pepper flakes.)
