Happy TOAST day! While I DID have toasts today as a ran out the door, I am sharing these VEGAN sweet potato toasts I made last week for my mom and I because they were amazing 😉 You can tell which☝️ I dove in for first 🙃 🍫 I am feeling so refreshed after an amazing night’s sleep and a much needed visit last night to the chiropractor 💆 It is one of my forms of self-care I treat myself to every couple weeks. PS sharing my coconut cashew cream recipe below. I’ll be working all day and making dinner with one of my best friends later, pretty pumped to see him. Now tell me…which toast would you go for?! Deets: 3 sweet potato toasts (cut 1/3 inch thick and baked on 400 for 30 minutes) 1. Homemade coconut cashew cream (blend together 1/2 cup cashews soaked overnight, 1 cup coconut milk—-refrigerated for 24 hrs without the liquid, 1/2 teaspoon vanilla, 1 tablespoon coconut oil, 1/4 teaspoon salt), strawberries, blueberries, @salbachia chocolate chia seeds and a dark chocolate drizzle. 2. Avocado, hemp seeds, micro greens, @artisanaorganics tahini. 3. Chocolate coconut yogurt (added cocoa powder and a touch of maple syrup to my homemade coconut milk yogurt and blended in a small food processor), banana, frozen raspberries, @nanajoesgranola and @georgiagrinders almond butter. •
