Happy Wednesday, beautiful people! I hope you all are enjoying the sunshine after last night’s amazing thunderstorm. There’s something so special about the rumbles and flashes of a good storm, especially on a warm summer night. It really sets the mood, doesn’t it?
This morning, I whipped up some savory waffles that turned out to be one of the best I’ve ever made. These Paleo cauliflower and (turkey) bacon waffles are a game-changer, topped with sautéed bacon and apples in ghee, @pickledplanet beet kraut, and a drizzle of @foragerproject cashew milk yogurt. They are seriously simple to make and incredibly delicious. I actually prepared them last night and just toasted them up this morning.

Now, let’s get into the details of these delectable waffles. Here’s what you’ll need:
Ingredients for Paleo Cauliflower and Bacon Waffles:
– 1/3 head of cauliflower, riced
– 1 egg
– 1 egg white
– 1 slice of bacon, chopped (or turkey bacon)
– 1 tablespoon of @nutiva coconut flour
– Himalayan salt and pepper to taste
To start, use @elliesbest nut milk bag to squeeze out all the water from the riced cauliflower. Mix the cauliflower with the rest of the ingredients in a bowl. Form two dough balls and place them in a preheated waffle maker on high heat for 2-3 minutes.
For the apple topping, sauté sliced apples and chopped bacon in ghee on medium-high heat in a cast iron skillet until caramelized.
