Happy Wednesday! Had a restful sleep last night…much needed. Decided to skip the gym today.
Happy Wednesday everyone! I hope you’re all having a great start to your day. I had a wonderful night’s sleep last night, which I really needed. Instead of hitting the gym this morning, I decided to take it easy and just do some stretching. I have a lunch date with a friend later at Whole Foods Boston, and we’re thinking about squeezing in a spin or yoga class afterwards. It’s been so nice to relax this morning and whip up a batch of my favorite waffles.
Out of all the waffle recipes I’ve tried, my grain-free banana bread waffles hold a special place in my heart. They’re incredibly simple to make and so delicious. If you haven’t tried them yet, the recipe is on my blog, but I’ll share it again below. I topped my waffles with a delightful watermelon-cotton candy grape-avocado salsa, fresh mint, some tahini from Soom Foods, and cashew milk yogurt from Forager Project. The combination was absolutely mouthwatering and refreshing.

Waffles Recipe:
Ingredients:
– 1 small ripe banana
– 2 tablespoons of coconut flour from Nutiva
– 1 egg from Vital Farms
– 2 egg whites
– 1 tablespoon of ground flax seed from Bob’s Red Mill
– 1 scoop of collagen from Further Food (Use code STARINFINITEFOOD10 for a discount)
– Cinnamon
Instructions:
1. Blend all the ingredients together.
2. Spray your waffle iron with avocado oil from Chosen Foods.
3. Cook the waffles for 2-3 minutes at a time.
Enjoy your delicious and nutritious waffles!
