Have a Terrific Tuesday! Enjoying a Delightful Morning with some Toast
Good morning everyone! I hope you are all having a fantastic Tuesday morning. Today, I started my day off by enjoying three slices of delicious sweet potato toast. It was the perfect way to kick off the day! I was lucky enough to spend the morning with my mom, as she stayed with me last night before heading back home to South Carolina this morning. It was so wonderful to have her company. We had a lovely dinner together and just relaxed and enjoyed each other’s company.
For breakfast, I decided to toast to Tuesday in three different ways. First, I topped my sweet potato toast with some creamy @kitehillfoods yogurt, refreshing watermelon and cucumber, fragrant dill, and drizzled it with some delicious @soomfoods tahini. It was a delightful combination of flavors and textures.
Next, I went for a BLT-style toast, using @iloveorganicgirl arugula, juicy tomato slices, and crispy turkey bacon. It was a classic combination that never fails to satisfy. Lastly, I topped my toast with mashed avocado, tangy @pickledplanet kraut (made with beets and garlic-basil), and a perfectly poached @vitalfarms egg. It was a hearty and delicious way to start the day.
Unfortunately, it’s raining outside today, so I know I’ll be getting wet when I head out later. But that’s okay, I’m still feeling positive and happy on this Tuesday morning.
