Good Morning lovelies! I hope you all are having a fantastic Monday and are enjoying the start of July 3rd! Where I grew up, July 3rd was always a special day – even more so than the 4th of July. It still holds a special place in my heart. Does anyone else feel the same way?

The weather today is absolutely gorgeous, and it’s shaping up to be a hot one too! After a few hours of work this morning, I’m hoping to head back to the beach for a little relaxation in the afternoon. And let me tell you, my breakfast this morning was something truly spectacular – a strawberry and carob frozen mousse cake that I whipped up. It was originally intended for a BBQ tomorrow, but I couldn’t resist diving into it this morning. It was just too delicious to wait! I’ll be sharing the recipe on the blog soon, so keep an eye out for it. This dessert, made with Sports Research beef gelatin, Sunfood carob powder, strawberries, and So Delicious coconut milk yogurt, is the perfect guilt-free treat.

I layered it with vanilla, banana, and carob “frosting”, then topped it off with freeze-dried strawberries, NuNaturals cocoa syrup, and Georgia Grinders cashew butter. Trust me, it was a taste sensation!
