How about a bowl of warm pasta salad for dinner 😊 I made this one with edamame, mixed sweet peppers, cherry tomatoes, garlic and shallots.

I simply stir-fried the veggies in a teaspoon of olive oil then added thyme, vegetable seasoning and pepper. I tipped in the pasta and stirred well. I allowed it to cool for a few minutes before tossing with pumpkin seeds and rocket (arugula). Simple & delicious.

Just because I keep seeing this pop up in some of my comments, I want to let you know that giving up my 100% plant-based diet was not about what I couldn’t get from plants, it was about what I was getting too much of, the digestive issues they were causing and the more sinister issues that could have developed if I carried on. I won’t address this issue again because I think it has dragged on for long enough and it’s time to let it go. Thanks for your support always 💙💫
