How is everyone’s Monday going? It’s been a great day in my own little world so far
Happy Monday everyone! I hope you are all having a fantastic start to the week. In my little corner of the world, the New England summer weather has finally arrived and I couldn’t be more grateful.
Today, I was really in the mood for a classic creamy tuna salad, so that’s exactly what I made. I whipped up a delicious tuna salad stuffed pepper using Safe Catch Foods tuna, chopped radishes and red onion, dill, olives, coconut aminos, mustard seed, So Delicious coconut milk yogurt, lemon juice, turmeric, Himalayan salt, and pepper. To go along with it, I made some homemade beet chips and served it all with some Pickled Planet basil and garlic kraut, Organicgirl baby spinach, and a fresh tomato and avocado salad. It was a flavor explosion!
For those of you wondering how I made the beet chips, it’s quite simple. I mandolin sliced some fresh beets, sprayed some tin foil with Chosen Foods avocado oil, and baked them in the oven at 400 degrees for about 20 minutes, flipping them halfway through. Just be careful not to burn them, as I’ve learned from experience!
I love experimenting in the kitchen and coming up with tasty, healthy meals. It’s such a joy to be able to create something delicious and nutritious for myself and my loved ones. Mondays can often get a bad rap, but I believe it’s all about perspective. Instead of dreading the start of a new week, I choose to embrace it with positivity and gratitude.
