How to make a power-packed salad:

Start with a base of romaine, arugula or baby leaf salad. Then add in:
🍃Plant protein: ¼ to ½ cup chickpeas, kidney beans, black beans, tempeh or tofu

🍃Raw or steamed veggies: 🥕, bell peppers, celery, 🥒, 🍅, spinach, 🥦, or sprouts

🍃Healthy fats: 🥑, olives, nuts, seeds

🍃 Fresh or dried fruit: 🍎, 🍐🍓, dried cranberries, raisins or sultanas

🍃Grains or starchy vegetables: ½ cup cooked quinoa, brown rice, 🍠, 🥔

Mix the whole lot up and dress with a yummy vinaigrette 😊

Kept lunch simple today. I made a Chickpea and sweetcorn salad and stuffed it in pitta bread. The recipe for my potato cakes is now on my blog, I’ll link it in my stories 💙
