I always thought I hated quinoa until I realised that I was cooking it wrong.
I always followed the instructions and that meant mushy, tasteless quinoa 🤢 (Don’t always follow packet instructions, trust your gut instinct). These days, I cook it till it’s al dente – I get the perfect texture with a subtle nutty taste 😋I also had the same experience with butter nut squash. I used to boil it but, now I roast it for a lovely soft on the inside, but firm on the outside texture 🙌🏾 What I’m basically getting at is that if you think you hate something, try different cooking methods, you may just find it’s not really as bad as you think 😉
Enough rambling.. in this bowl I have 🍃 quinoa, mushrooms, spinach, cherry 🍅, borlotti beans, butter nut squash and edamame. Have a lovely evening lovelies 🌹✨
