I always thought I hated quinoa until I realised that I was cooking it wrong.
I always followed the instructions and that meant mushy, tasteless quinoa ? (Don’t always follow packet instructions, trust your gut instinct). These days, I cook it till it’s al dente – I get the perfect texture with a subtle nutty taste ?I also had the same experience with butter nut squash. I used to boil it but, now I roast it for a lovely soft on the inside, but firm on the outside texture ?? What I’m basically getting at is that if you think you hate something, try different cooking methods, you may just find it’s not really as bad as you think ?

Enough rambling.. in this bowl I have ? quinoa, mushrooms, spinach, cherry ?, borlotti beans, butter nut squash and edamame. Have a lovely evening lovelies ?✨
