I believe I have this on repeat for Sunday, but lately I’ve been craving smokey flavors.
I feel like I may have mentioned this before, but I just can’t get enough of smoked salmon lately! There’s something about that rich, flavorful fish that I just can’t resist. So when I recently picked up a pound of wild sockeye smoked salmon from Trader Joe’s, I knew I had to put it to good use.
I decided to make a delicious smoked salmon salad using romaine lettuce, arugula from @organicgirl, beets, sweet potatoes, red onion, cucumber, avocado, fresh dill, capers, mustard seeds, and a spicy yogurt mustard dressing. The dressing was a combination of @foragerproject cashew milk yogurt, coconut aminos, birds eye chili mustard, lemon juice, and pepper. The flavors all came together perfectly, creating a dish that was both satisfying and flavorful.
On top of that, I’m happy to report that I am officially moved into my new place and feeling relieved. It’s been a hectic few days, and I am completely exhausted, but it feels good to finally be settled. After spending some time in the kitchen preparing my salad, I plan on taking it easy for the rest of the day and just relaxing. Happy Sunday!
