I feel like I’ve been cheating on chickpeas recently . I haven’t eaten them in a…


I feel like I’ve been cheating on chickpeas recently ?. I haven’t eaten them in a week or more ??‍♀️ I was craving them today so I made this simple curry. I didn’t measure anything out but roughly I used:

¼ tsp turmeric
½ tsp madras curry powder
½ tsp garam masala
1 fat garlic clove, minced
1 shallot, finely chopped
1 tsp vegetable seasoning
400g tin chickpeas
Large handful fresh coriander, chopped
½ red chilli

I sautéed the garlic and shallots in water until soft then added all the spices, chill and vegetable seasoning. I cooked that for around 5 minutes, adding small splashes is water when needed. The curry was thin so I added a couple teaspoons of cornflour slurry {cornflour in water] then I added the chickpeas and the coriander and simmered until the chickpeas were warm. I served it over rice and a side of steamed spring greens.
