I promise I’m not just eating rice here. I’ve eaten yams and sweet potatoes today, it’s just I’ve been on the go a lot and lighting indoors is pretty poor.
This is not a black bean stew, it’s actually black chickpeas. I found them at an Indian store and I had to try them. They’re very different from regular chickpeas. They have a much firmer texture and taste different too. I’m not sure what beans to compare them to, but they’re unlike anything I’ve tasted. I like them but they can’t compete with my favourites 😊
I wanted to taste the beans without too many herbs so I cooked them without herbs. I simply cooked fresh tomatoes and tomato paste with onions, garlic, green peppers, red peppers and vegetable broth. Once the tomato based cooked down I added the chickpeas and chilli flakes, cooked them for a few more minutes then served with rice and a few 🥑 slices.
P.S i cooked the chickpeas from scratch, it took a few hours to get it to the texture I was after.
