I was able to take a photo of a second meal today so I thought I’d share 🙂. This one is 🍋 and pea couscous with creamy garlic & parsley mushrooms, baked tofu, steamed 🥦 and a garlic tahini sauce 😊

I cannot stress enough how important it is to drink enough when you start incorporating more plants into your diet. Without enough water, your body will run into trouble processing the {increased} fibre in your diet.

The usual recommendation is to try to drink at least 8 glasses a day. If you’re eating a lot water-rich fruits, eating steamed or lightly boiled veggies, you may not need as much water. You can tell if you’re getting enough by monitoring the colour of your pee. If it’s a pale or light yellow, you’re doing just fine.
