I woke up at 3am today and couldn’t go back to sleep. I’ve been zombie-ing around all day. It’s such a pain because I’m tired but I can’t sleep…ugh.

Today’s bowl is a vegetable pasta. I’ve literally just chopped a bunch of vegetables, seasoned them with herbs and stirred them into cooked pasta. Not complex at all ?

First full working week of 2018 starts tomorrow so holidays are now well and truly over. It’s going to be a very busy week for me so I hope I manage to get some sleep tonight ?? Have a lovely evening ? #veganbysomi
