I’d like to call this a one-pot chilli pasta but it really isn’t because I made the chilli and pasta separately then mixed them together at the end. I don’t like cooking chilli pasta as a one-pot dish because I like to control the amount of starch from the pasta that seeps into the chilli if that makes sense..

This dish is actually quite high in protein ~25g. Good option to consider if you want high protein vegan meals. You can also add edamame or tofu to increase the protein content further #veganbysomi
