If you’ve been reading my captions closely, you may have noticed for that I keep complaining about being tired and needing sleep etc. The unusual fatigue is partly what sparked my decision to get a blood test done. After telling me everything was fine, my doctor called me back on Friday to tell me they missed something. I have to go back in for further blood tests and to pick up some prescriptions. But I’m not going to say much more until after I collect my prescription tomorrow. My plan is to do an IGTV video & full blog post to explain everything properly 😊
I’m still keeping things very simple over here especially with being tired and all… I made a Chickpea stew with rice and because I know you’ll ask, here’s the recipe.
🍃400g can chickpeas, drained and rinsed
🍃2 medium garlic cloves, finely minced
🍃1 medium shallot, finely chopped
🍃 2 tbsp tomato purée (paste)
🍃 ½ red chilli (optional)
🍃 3/4 tsp Herbs de Provence
🍃 ½ tsp dried tarragon
🍃 5 cherry tomatoes, quartered
🍃 ½ vegetable stock cube
🍃black pepper, to taste
Heat a small splash of water (or oil if you prefer) in a medium saucepan over medium heat. Sauté or fry the the shallots and garlic for 1-2 minutes until soft. Add the tomato purée, vegetable stock cube and herbs and cook for 2 minutes then add around 100ml of water and cook for 5-7 minutes, still on medium heat. Add the chickpeas and and cook for a further 2-3 minutes on a simmer to warm the chickpeas Season with black pepper (and salt if necessary). Take the pan off the heat and serve over rice or anything else you prefer.
