Incredible Turkey Burger on a Cauliflower Bun!

I recently made a delicious turkey burger with a twist – a cauliflower bun! This burger was so satisfying and the cauliflower bun was the perfect addition. I wanted something hearty and flavorful, and even though I only had turkey on hand, it turned out to be a great choice. I decided to add some mushrooms to my turkey burger for an extra savory kick.

To make the cauliflower bun, I used just half a head of cauliflower that I riced in my food processor. I then added some coconut flour, a Riesling blend, and an egg (or two egg whites) for binding. A touch of salt and pepper brought everything together. To ensure the bun had the right consistency, I used my trusty nut milk bag from Ellie’s Best to squeeze out all the excess liquid from the cauliflower. This step is crucial for getting the bun to hold its shape. Once that was done, I mixed all the ingredients together by hand and formed the mixture into two bun shapes on a baking sheet that I had lightly sprayed with avocado oil from Chosen Foods. I popped the buns in the oven at 450 degrees and let them bake for about 15-20 minutes until they were firm and cooked through.

To assemble my turkey burger, I topped it with slices of avocado, tomato, red onion, and fresh arugula. I also whipped up a quick chipotle “mayo” using Kite Hill Foods yogurt and Heat and Flavor chipotle sauce. The flavors were incredible together! I also made some sweet potato fries to accompany my burger, although they were so good that they didn’t make it into the photo before I devoured them.

This meal was not only delicious but also nutritious. The cauliflower bun added an extra serving of veggies to my meal, while the turkey burger provided a good dose of protein. It was a satisfying and guilt-free way to enjoy a burger without all the carbs of a traditional bun.
