?Indian bento with my favorite dal variation- ‘creamy’ dal-and coconut cilantro chutney. (Inspired by the delicious sweet potato curry bento by my talented foodie friend @anna.culina.) Just hope I don’t stain my clothes with turmeric yet again.? I hope you’ll try this dal recipe even though it means buying a few spices. Honestly…you don’t have to include all of them. But the more, the better?.?

.?Recipe: Rinse 1c golden (or red) lentils in water. Cook in 3 cups water. Bring to boil, reduce heat, cover and simmer about 15 minutes until just soft. I’m a medium saucepan, sauté 1 chopped onion in 1 tbsp oil until translucent. Add 2 cloves minced garlic and sauté another minute. Add 1/2 tsp black sesame seeds, 1/2 tsp cumin seeds, 1/2 tsp fennel seeds, 1/2 tsp mustard seeds, and 1/2 tsp fenugreek seeds (optional). Cook another couple minutes. Add 1 bay leaf + 1 tsp turmeric. Add the cooked lentil with their water and stir. Add 2 chopped plum tomatoes, 2 tbsp fresh lime juice. Simmer covered 20 minutes. Add more water if too thick. Stir in about 1/4c chopped cilantro and salt to taste. Blend dal for creamier texture (optional).
