🌱Lentil walnut bites…gluten-free, oil-free and delicious. I kid you not😜. I put these together on a whim and they turned out super yum and surprisingly very filling. 🤧I feel like everyone around me is getting the flu. It’s so rampant right now. Get enough sleep and wash your hands a lot….and eat healthy of course 💛.
🌱Recipe: In food processor pulse 1/2 cup rolled oats and 1/2 cup raw or toasted walnuts until coarsely ground like course meal. Mix in large bowl with 1-1/2 cup cooked red or yellow lentils (cooked very soft), 1/2 cup diced red onion, 2 minced garlic cloves, 1 tbsp tomato paste, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp dried thyme, 3/4 tsp ancho chili powder or chili powder, 1/2 tsp turmeric (for color). Mix well. Form into small balls. Bake on parchment-lined baking sheet at 400F about 25 minutes, flipping half way. Allow to cool. .
