?Lentil walnut bites…gluten-free, oil-free and delicious. I kid you not?. I put these together on a whim and they turned out super yum and surprisingly very filling. ?I feel like everyone around me is getting the flu. It’s so rampant right now. Get enough sleep and wash your hands a lot….and eat healthy of course ?.
?Recipe: In food processor pulse 1/2 cup rolled oats and 1/2 cup raw or toasted walnuts until coarsely ground like course meal. Mix in large bowl with 1-1/2 cup cooked red or yellow lentils (cooked very soft), 1/2 cup diced red onion, 2 minced garlic cloves, 1 tbsp tomato paste, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp dried thyme, 3/4 tsp ancho chili powder or chili powder, 1/2 tsp turmeric (for color). Mix well. Form into small balls. Bake on parchment-lined baking sheet at 400F about 25 minutes, flipping half way. Allow to cool. .
