Lunchtime Vibes: Craving a Frittata after some serious contemplation
Today at lunch, I was feeling those hungry vibes and really had to think about what I was going to make. After debating with myself for a bit, I settled on a delicious frittata using whatever ingredients I had in my fridge. I ended up using 2 whole eggs, 3 egg whites, sautéed mushrooms, onions, zucchini, butternut squash, beets, and peppers. To add some extra flavor and protein, I threw in some wild smoked salmon from Trader Joe’s.
To top it all off, I added a handful of fresh arugula, half an avocado, some delicious kraut from Pickled Planet, hot sauce from Heat & Flavor, and a sprinkle of dill and mustard seed. The combination of flavors was absolutely killer and left me feeling satisfied and ready to tackle the rest of my day.
I hope everyone else is having a great start to their week as well. Personally, I’m about to head to the chiropractor for one of my favorite appointments. It always leaves me feeling so refreshed and relaxed. Sending lots of love to all of you ❤️.
