Meatless Monday coconut flour crust PIZZA with a vegan beet mozzarella! Posting recipe below. Happy Monday loves! I hope you’re all having an amazing start to the week ❤️ Today has not been going as planned, but trying to make the best of it. I did however, get to see an amazing sunrise this morning, check my stories ?Sharing this pizza I made this weekend, which was fantastic. Topped with this delicious beet spread (made by blending cooked beets with my homemade mozzarella), avocado, sugar snaps, watermelon seeds and tahini! Wishing you all a fantastic start to the week!!

Deets:
Crust: 3 eggs, 1/4 cup plus 3 tablespoons of coconut flour, 1/4 teaspoon salt, 2 tablespoons melted coconut oil, 2 tablespoons almond butter, 2 teaspoons cream of tartar, 1 teaspoon baking soda, 1.5 teaspoons of Italian spice blend. Mix together wet ingredients then dry and combine the two. Form a dough then crust on a pizza stone or parchment paper, cook in oven on 350 for about 20 mins. •
