It is fairly obvious that it is meatless everyday for me, but how many of my non-vegan/vegetarian followers do meatless Monday? Let me know in the comments by using the ??♀️ emoji.

#meatlessmonday is a great place to start if you’re trying to transition to a plant-based diet or if you’re just trying to cut down on the amount of animal produce you eat. It will help you get used to the idea of eating vegetarian/vegan meals without the feeling of overwhelm. You can experiment with different dishes, different flavours and you’ll also be doing your bit for the environment (and the animals) whether or not you care about such things ?. No judgement if you don’t because my no.1 priority is my health, everything after that is a bonus ?

In my bowl, oven roasted potatoes, steamed ?, cherry ?, roasted mushrooms, ?, fresh parsley and Moroccan-spices Borlotti beans. The recipe for the Borlotti beans are exactly the same as the chickpeas from yesterday. And since you asked, here goes…

RECIPE: Morrocan-spice beans

Ingredients
1 medium shallot, finely chopped
2 small garlic cloves, finely minced
½ small aubergine, diced
1 can Cooke’s Borlotti beans, drained and rinsed
1 tbsp tomato paste
1 tsp Moroccan seasoning
½ vegetable stock cube
Black pepper, to taste
1 red chilli pepper

Heat a small splash of water or oil in a medium saucepan. Then fry or gently sauté the onions and garlic without burning.

Add the tomato purée, stir well and cook for 2-3 minutes. Add the diced aubergines, chilli, vegetable stock, Moroccan seasoning and a good splash of water. Cook for around 10 minutes or until the aubergine is cooked.

Add the the beans and a small handful of coriander if using. Turn the heat down to a simmer and cook for 2-3 minutes or until the beans are warm. Season with black pepper and salt if necessary. Take off the heat and serve with any accompaniment of your choice.

FYI: If you’re serving on toast, cook until most of the liquid evaporates or else you’ll be left with soggy toasts.
