Minty Pasta Salad Lunch: A Winning Recipe! Let’s Dive into the World of Herbs.

I can’t get enough of fresh herbs in my cooking! They add so much flavor and freshness to dishes. Cilantro, parsley, dill, mint, and basil are always in my kitchen, but I love to mix it up with different herbs depending on what I’m making. Each herb has its own unique benefits for the body, from cooling to detox to warming properties. Today, I whipped up a delicious chicken, veggie, and pasta salad with a creamy mint-avocado-yogurt sauce that was to die for.

First, I sautéed some shiitake mushrooms, broccolini, red cabbage, peppers, and zucchini in coconut oil. Then, I mixed them with some chickpea pasta, fresh arugula, and roasted chicken. The star of the show was definitely the creamy sauce – a blend of almond milk yogurt, coconut aminos, lemon juice, mashed avocado, minced mint leaves, and fresh ground black pepper. I sprinkled some caraway seeds on top for an extra burst of flavor.

This mint-avocado-yogurt sauce is so easy to make and adds a refreshing twist to any dish. Just mix all the ingredients together and you’re good to go!
