NOODLING my way into the week with this Meatless Monday Noodle Bowl ?! Been a while since I’ve had some tempeh and I got to try this new @hempeplantprotein version made from chickpeas and hemp seeds! It’s ABSOLUTELY Deliciousness. I pan fried it in some coconut oil, paired it with some arugula, roasted asparagus, tomato and creamy avocado @allnewdles noodles!!! Recipe for avocado sauce below. Sauce: about 2 ripe avocados, 1/2 cup unsweetened almond milk, 1/2 roasted onion, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon garlic powder, 1/3 cup cilantro, 1 tablespoon lemon juice. Processed in food processor until smooth. •
