NOODLING my way through this sunny day with some THAI CASHEW CURRY! Actually, I’m laying in the sun snacking on almonds enjoying my last day in FL 🙃…but I made this last week and it was DELICIOUS. I have always been a huge fan of Thai flavors…when I was in high school it was always my go-to for first date dinners ❤️ AND, you know how I feel about my sauces, so I made a new spicy cashew-yogurt-curry dip/sauce and it was sooooo perfect for this bowl. Recipe below. Paired with some spicy shrimp, @explorecuisine edamame noodles, broccolini, arugula, peppers, greens, cilantro, cashews and avocado. I hope you all have the best day! Spicy Cashew Curry Sauce:
2 tablespoons cashew butter, 3 tablespoons cashew yogurt, 1 tablespoon sriracha, 1 tablespoon lime juice, 1.5 tablespoon liquid aminos, 2 teaspoons curry powder. (Add water if you want a thinner sauce)
